BIOCHEMICAL STUDIES AGRICULTURE NOBEL PRIZE IN CHEMISTRY A.I. VIRTANEN |

Detailed biography and analysis of the scientifi c activities of the sole Nobel Lau-reate in Chemistry (for 1945) from Finland, the most famous Finnish scientist Artturi Ilmari Vir-tanen (15.01.1895–11.11.1973), who founded and 15 years headed the Academy of Sciences and
Arts in Finland, was described on the base of the materials of the International Information Nobel Centre (IINC). He is the creator of AIVmethod of preserving green fodder (1928–1929) and AIV-salt for butter. Method is the acidifi cation of forages to pH 4, allowing all bacterial and enzymatic processes. For this purpose he used organic acids, then hydrochloric acid with minor additives sul-phuric acid. He developed methods of preserving milk, butter and cheese, and he also created a new technology for the industrial production of these products at the fi rm «Valio».
